Simple Chewy Chocolate Chip Cookies
If you know me, you know how much I look forward to my afternoon coffee and cookie break. It’s a little ritual I started after having kids. One of my sisters sent me this go-to chocolate chip cookie recipe, and though it was hard for me to break from my beloved “easy as can be” blondies recipe, these cookies quickly rose up the ranks as favorites. It’s a great cookie “base” to experiment with, too!
INGREDIENTS:
1 1/2 sticks unsalted butter, melted and cooled
1 cup packed brown sugar
1/2 cup granulated sugar
1 egg plus 1 egg yolk
2 teaspoons vanilla extract
2 cups plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Chocolate chips, measure depending on your preference
Flaky sea salt for topping
INSTRUCTIONS:
Preheat oven to 325 degrees.
Line a baking sheet with parchment paper. In a stand mixer or in a large bowl by hand, cream together the butter and the sugars. Add the egg and yolk, along with the vanilla and combine. Incorporate the dry ingredients. Stir in your desired amount of chocolate chips.
Use a cookie dough scoop to evenly disperse balls of dough on the prepared cookie sheet. Sprinkle each cookie with sea salt. Bake for roughly 13 minutes. This recipe makes about two dozen cookies.
