Quickest Fancy Tomato Soup
My friend Hilary throws an outstanding Christmas cocktail party every year. She’s got four small boys but has never let that interrupt or derail her desire to put on this fancy fete for her friends. It’s for couples, NO KIDS, and cocktail attire is demanded. It’s a way for her to serve her friends and put together something that doesn’t include a kids menu. Every year she puts out a big soup tureen of this tomato soup along side crusty, cheesy mini grilled cheese sandwiches. I finally asked her for the recipe, and I was shocked it was a simple recipe from @thepioneerwoman. I’ve modified this just a bit, but you can find the original here. It’s soup season, so enjoy!
INGREDIENTS:
6 Tablespoons Melted Butter
1 whole Medium Onion, Diced
1 bottle (46 Oz.) Tomato Juice
2 cans (14 Oz. Cans) Diced Tomatoes
1 Tablespoon (up To 3 Tablespoons) Chicken Base
3 Tablespoons (up To 6 Tablespoons) Sugar
1 pinch Salt
Black Pepper To Taste
1 cup Cooking Sherry
1-1/2 cup Heavy Cream
Chopped Fresh Parsley
Chopped Fresh Basil
INSTRUCTIONS:
In a large pot or a Dutch oven over medium-high heat, melt the butter. Add the onions and sauté until translucent. Add tomato juice, tomatoes, bouillon, salt, and pepper. Stir and bring to a near boil. Turn off the heat. Add the sherry and cream. Stir. Add basil and parsley. Use an immersion blender (right in the pot) to blend to desired consistency. Serve with grilled cheese, crusty bread, or your favorite tomato soup accompaniment.
