Maple Bacon-Wrapped Chicken Breast
MAPLE BACON-WRAPPED CHICKEN BREAST on a bed of rainbow 🌈 veggies and quinoa! As they say, necessity is the mother of invention, and tonight I knew I wanted to do a sheet-pan dinner and that’s about it. I didn’t really meal plan this week, so I opened the fridge to find chicken breast, bacon, a bag of mixed veggies, and a head of purple cauliflower. This literally took less than 10 minutes to prepare—I chopped up the cauliflower, spread a few handfuls of the mixed veggies, loosely wrapped the chicken breasts in bacon and placed them among the veggies. Then I drizzled the whole pan with olive oil, dusted the vegetables with my favorite herby salt blend (will share recipe soon!), and doused the top of the bacon-chicken with fresh ground pepper, maple syrup, and a squiggle (yes, a squiggle) of honey mustard. I baked this at 375 degrees for 35 minutes and made a pot of quinoa in the meantime. Easy-peasy and crowd-pleasing!
