Healthy Baked Egg Rolls

There are certain cuisines I’d rather leave to the experts, and this includes most Asian cooking. But I love trying new flavors and making healthy versions of some of my favorites like egg rolls. Look for egg roll wrappers in the cold case by the produce at your grocery store. Get creative, and fill with whatever you’re craving.

HEALTHY BAKED EGG ROLLS

INGREDIENTS:
3 large carrots
3 celery stalks
1 cup cauliflower florets
1 leek
1-inch knob fresh ginger
2-3 Tablespoons sesame oil
1 package egg roll wrappers

INSTRUCTIONS:
Preheat oven to 350 degrees.
Finely dice all vegetables. In a large skillet over medium-high heat, add oil and then veggies. Sauté until tender. Line six wrappers on a baking sheet (I double-up on my wrappers). Add a hefty scoop of vegetable filler to each and roll like a burrito. Drizzle and rub olive oil over the top. Pop in oven for about 20 minutes or until rolls are nice and crispy. Enjoy with sweet and sour or peanut sauce.
