It’s festive potluck season! If you’re heading to a brunch and need a quick egg dish in a pinch, think about making these simple egg cups. They’re a definite go-to for my family. Thanks, Mom!

HAM EGG CUPS

INGREDIENTS:

18 slices good-quality ham
18 eggs
A tiny splash of cream for each cup (do you like this measurement?)
Paprika
Salt & pepper

INSTRUCTIONS:

Preheat oven to 350 degrees. Heavily grease a muffin tin with organic cooking spray or butter. Place 1 slice of ham in each muffin cup, creating a crevice for the egg. Crack 1 egg in each cup (if you’d prefer, you can use a glass measuring cup for cracking and pouring). Then, pour a tiny splash of cream in each cup (you can also omit this step, but I think it adds a little something extra!). Sprinkle paprika, salt, and pepper atop each egg cup. Bake for 25 minutes or until the eggs are set.
