Slow Cooker Chicken Caesar Salad Sandos
Not the best photo, BUT! If you love chicken caesar salad as much as I do and are looking for a way to pretty much avoid making dinner, then here you go. Round up these ingredients and join me for Crockpot Tuesday tomorrow. (If you’re new here, I just like to share what I’m tossing in the slow cooker once a week to hopefully inspire you to think ahead for at least one meal a week and use your “cooking time” to do something fun or productive.) Pair sandos with roasted veggies or sweet potato fries, and call it a meal. It’s nothing fancy, but it’s an old go-to and a crowd pleaser.
SLOW COOKER CHICKEN CAESAR SALAD SANDOS
INGREDIENTS:
3 or 4 chicken breasts (can be fresh or frozen)
Salt & pepper
Chicken broth or water to cover chicken
1 bottle or jar of your favorite caesar dressing (bonus if you make your own; I share my favorite on the blog in the recipe archive)
Romaine lettuce (chop your own or buy a bag ready to go)
Optional: Grated Parmesan cheese & a squeeze of lemon juice, for finishing
INSTRUCTIONS:
Place chicken breasts on the bottom of a slow cooker and sprinkle with salt and pepper, then cover with broth or water. Depending on how much time you have, set your slow cooker for 4 hours on high or 8 hours on low. Once chicken is cooked, turn off the slow cooker. Discard most of the liquid, and shred the chicken with two forks while still in the slow cooker. Cover with the dressing. If you so desire, toast your buns in the oven or in a toaster. Divide chicken among buns and top with shredded lettuce. Finish with a squeeze of lemon juice and Parm (again, if you desire).
