Almond Flour Chia Pancakes

Nothing better than a pile of pancakes on a weekend morning (or any morning for that matter)! We’ve been perfecting this quick and healthy recipe at our house—usually I’m yelling out the ingredients while my husband whisks it all together and begins the assembly line production on a big electric griddle. (We like to double the recipe and keep leftovers for easy breakfasts.)

ALMOND FLOUR CHIA PANCAKES
Ingredients: 
3/4 cup all-purpose flour
1/4 cup almond flour 
2 teaspoons baking powder 
1 teaspoon salt 
1 egg
1 cup milk 
2 tablespoons olive oil (or melted butter) 
2 teaspoons chia seeds 

Instructions:
In a large bowl, whisk together the flours, baking powder, and salt. Add the egg and milk and continue whisking to combine. Add chia seeds and stir to incorporate. Then...the rest is up to you and your preferences for pancakes. We suggest using a 1/4 cup measuring cup to pour batter onto a greased griddle or frying pan. Wait until the batter bubbles and appears done on the bottom before flipping. Top with butter, syrup, or your favorite pancake toppings.
