When I received this go-to Kale Power Bowl recipe from my college teammate Adriane, I couldn’t wait to whip it up. It’s basic enough, but it’s not something I really ever think to toss together. And when I do add sweet potatoes to salad, they’re usually roasted, not mashed.

That’s why I love finding out what people make on the regular. It doesn’t have to be fancy to be special, and sometimes trying something out of your routine is just the ticket to getting out of a rut—whether in the kitchen or in life.

NOTE: I added shredded chicken, garbanzo beans, and blue cheese to my power bowl!

ADRIANE’S KALE POWER BOWL

INGREDIENTS:
2 sweet potatoes, peeled and cubed
2 tablespoons butter
1 large bunch lacinato kale, chopped into small pieces
¼ cup dried cranberries
¼ cup walnuts, chopped
~¼ cup fresh lemon juice
~¼ cup extra virgin olive oil
Salt
Pepper
Optional add-ons: Cooked or smoked salmon, shredded chicken, or protein of choice; garbanzo beans, blue cheese, etc.

INSTRUCTIONS:
Place the sweet potatoes in a medium pot and add enough water to cover by about an inch. Bring the pot to a boil and let simmer until the sweet potatoes are soft. Drain the water, add the butter and mash with a fork. Meanwhile, combine the kale, cranberries, and walnuts in a large bowl. In a small bowl, whisk together the lemon juice and olive oil. Drizzle the dressing on top of the kale mixture, and massage the kale until all of the greens are well coated. Top with mashed potatoes and sprinkle with salt and pepper to taste.
