THE Lemon Muffins (Mom's Secret Recipe)
This is one of my mom’s most requested baked goods recipes. If you played tennis with my sisters in high school during the late ’90s, these muffins were legendary. I almost can’t believe I’m sharing this. It might be a family secret. If you remember to take out your stick of butter ahead of time, you can literally whip this up in 5 minutes. Super simple.
INGREDIENTS:
1/2 cup butter
1 cup sugar
2 eggs
1 1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
For the glaze:
1/4 cup sugar
Juice of 1 lemon
INSTRUCTIONS:
Preheat oven to 350 degrees.
In the bowl of a standing mixer or in a medium bowl with a hand mixer, cream together the butter and sugar. Incorporate eggs one at a time. Add the remainder of the ingredients and combine. Pour evenly into 12 muffin cups (be sure to coat with cooking spray generously, even if you use liners, as the batter will spill over).
Bake for 15 minutes or until muffins pass the toothpick test. Prepare glaze by combining sugar and lemon juice. Once the muffins are cooled, remove from the muffin tin and use a toothpick or fork to poke holes in each. Drizzle the glaze on top.
